Seed stores and mail-order suppliers sell mother bulbs ("sets") for planting.  In Upper south, plant early in spring.  In Middle, Lower, Coastal, and Tropical South, plant October - December for early summer harvest.  Break bulbs up into cloves and plant base downward, 1 - 2 inches deep, 2 - 3 inches apart, in rows 1 foot apart.  Harvest when leafy tops fall over; air-dry bulbs, remove tops and roots, and store in cool place.   Giant or elephant garlic has unusually large (fist-size) bulbs and mild garlic flavor.
