Cashew Milk*

From the Kitchen of Serendipity Ranch

 

1 c boiling water

1 c cashews

 

 

The cashews must be raw and preferably pieces. After measuring out your cashews for any given recipe, be sure to rinse them thoroughly with hot water as they are quite dirty. When "whizzing" or "liquefying" cashews, use boiling water and start with just enough to cover the cashews in the blender jar. Always start on the lowest speed and work up as you add the remaining hot water. This makes for a smoother product.

Slowly add enough hot water to make 4 cups. For sweet recipes, add a dash of salt, vanilla and honey to taste. For gravies and sauces, add salt and seasonings to taste. If the full recipe is not used in its entirety, divide remainder into approx. 1 cup portions and freeze for later use.
